Ingredients
Serves 4
1 packet Sun Brand Flour Vermicelli
200g Sliced Spanish Mackerel
2 Stalk of Choy Sum (Leaves)
1 Handful of Beansprout
1 Ikan Stock Cube (Preferably Seafood/Fish)
Seasoning and Marinate
White Pepper, Fish Sauce, Light Soya Sauce and Chinese Cooking Wine
Cooking Steps
Marinate the fish with Chinese Cooking Wine, White Pepper, Fish Sauce, and Light Soya Sauce in a bowl for about 15 to 30 mins in the fridge
Bring a pot of water to boil with the Stock cube to create a soup base
Season with Fish Sauce, White Pepper, or Light Soya Sauce to taste
Blanch Choy Sum for 3 to 5 mins in boiling water
Blanch Beansprouts for 1 min in boiling water
Blanch one portion of Sun Brand Rice Vermicelli according to the package instructions or until softened and drained
Blanch Spanish Mackerel without marinade until the meat turns opaque white
Assemble and ladle hot soup over the Vermicelli and ingredients
Tips and Notes
Add thinly sliced ginger as toppings for a more hearty taste
Add baking soda to the fish marinade to give the fish a silky texture
Do not slice the fish too thin or too thick to avoid overcooking. The thickness of the fish will affect the cooking time
